Riced Cauliflower Waffles

Ever tried a waffle made from riced cauliflower?! Game changer. Frozen riced cauliflower is sucha staple in my freezer. I literally use it in everything- my smoothies, to make cauliflower fried rice, and now waffles! Itโ€™s so easy to have on hand plus has no sugar and is super low cal. One waffle is made with sweet potato and egg and topped with carmelized apple slices and roasted pecans the other waffle is made with riced cauliflower and egg and topped with 1/2 of an avocado. Ingredients (only 3!):
1 cup Frozen riced cauliflower
1 egg
avocado oil
option: Add 1 scoop of collagen peptides

Directions:
1. Place the frozen riced cauliflower in a bowl and microwave until defrosted.
2. In a food processor or blender, add the riced cauliflower and 1 egg and blend until you have a mixture of even consistency. You may need to add a tbsp or two of water if you are having trouble mixing the riced cauliflower and the egg.
3. Coat waffle maker with avocado oil. I like using a cooking oil spray pump to do this so that I do not use too much oil.
4. Add the mixture to the waffle maker and cook until the waffle maker indicates that it is complete!

The cauliflower waffle will definitely be for more of a savory waffle combo. Top it with a fried egg, a half of an avocado, and hot sauce! Enjoy!

Cauliflower Fried Rice

Donโ€™t need takeout on rainy Sundays with this cauliflower fried rice. This babe is gluten free, dairy free, and soy free and full of flavor. Itโ€™s also not super heavy like regular fried rice so you wonโ€™t feel the need to curl up in a ball and binge watch netflix after consuming. Happy Sunday everyone!ย 

Ingredients:

1 package frozen riced cauliflower

2 chopped carrots

1/4 cup frozen peas

1/4 sweet onion

2 cloves of garlic

2 eggs

ginger

Gluten free coconut aminos

avocado oil

ย 

Directions:

1. In a pan, add chopped onion and avocado oil. Cook for about a minute or until fragrant.

2. Add the peas and carrots to the pan and continue to cook for a few minutes or until the carrots start to soften.

3. Add garlic cloves and additional avocado oil if necessary. Cook for about 30 seconds.

4. Add the cauliflower rice. Continue to cook and mix the contents of the pan until the cauliflower is cooked.

5. Push ingredients to the side and add two eggs directly to the pan. Allow to cook for about 1 minute and then begin to mix with the rest of the ingredients.

6. Continue to mix contents of the pan for and add ginger, coconut aminos, salt, and pepper. Cook for a few minutes or until the eggs are fully cooked. Make sure that the contents of the pan are fully mixed to disperse the seasoning. Serve in a dish and enjoy!
